Is there any way, we can add date and day in top status bar , where it shows time, wifi signal, etc..
Also can we customize the status bar..

No, stock rom doesn't offer that. The best you can do is add seconds to statusbar clock under systemui tuner. You can install gravitybox via xposed for this but it requires root.

I am bit surprised that there arent more posts about this.. How can I (in custom roms) prevent the Status bar from being pulled down on a secured lockscreen? The way it is now everyone can change everything that is in the Status bar, even disabling the lockscreen if the status bar has acces to unsecure user profiles e. g. "home"

You'll need to root your phone and there are plenty of custom roms available with that option.
If you root your phone and get xposed, the best app available for statusbar is "Flat Style Colored Bars" with tons of customizations.
I want to hide for example: the Messenger/Whatsapp icon from my status bar. But I still want to receive a notification & sound. How can I do that? Which module can I try? (Nougat)
I am really bored of stock look of the status bar icons,
I dug little info about it and found that with substratum and status bar themes it can be achieved, but sadly most of the guides were old, also they have mentioned that it would not work on Oreo+ ROMs.
Can anyone guide me? I would like to have MiUi like status bar signal bar, battery icons etc.

Is there anyway to remove the time from the status bar. I have a widget so dont like it there.
You can install Good lock 2019 and use quickstar to hide the clock from status bar
