Unless you are already rooted you're out of luck for anything that needs root. You can freeze bloatware and stuff but I personally don't know the best way to handle speed on a stock device.

If you are on lollipop without root you can't downgrade so you can't root.

I saw VoLTE option on some roms(as added feature), don't remember which, but it wasn't working eventhough my carrier supports it. So, I have no clear answer to give sorry.
