There are only unofficial CM builds for that model. The latest is CM13.
CM has better performance than touchwiz.

Is installing jflte CM 11 on I9500 possible? I checked the Cyanogenmod device info for I9500 and there are no M releases but the jflte device info says that the device is unified. Not sure what that means. And if it's impossible to install on I9500 will the CM team ever release a stable build for I9500?

There is not 6.0 Touchwiz for the S4.
There are themed 5.1 TW roms that look like 6.0, but no actual 6.0 rom. Lollirom 8 is such a rom.
For CM based roms, I'd say go for Optimized CM13.
