Nandroid is done in recovery.
Online nandroid is done while phone is booted in Android.

I recall an issue with the s3 about the efs partition being corrupted during flashing..do you know if the s4 has the same issue and should I back up the efs on the s4...thanks

If ur s4 is rooted with cwm recovery or u've any previous backup done by cwm recovery its easy to restore it.use the same recovery to restore

Apparently you can't go back to 4.3 after updating bootloader to 4.4.2. Something that Samsung put in I've been told.
